Heading up the kitchen, Chef Enzo Manfredi, who has worked in fine establishments and has been at the estate for 10 years, composes a gastronomic score inspired by the local area.
His cooking deftly moves between the classic foundations of French gastronomy and his own modern, sensitive and creative style.
Our Local produce, a source of inspiration, is the raw material for refined, precise and sincere dishes. Some creations have become emblematic of the house, such as Arctic char cooked under beeswax, a delicate tribute to the Vosges landscapes and to the know-how of local artisans.
Other dishes reinterpret local produce with the seasons, always with elegance. From starter to dessert, each draws its inspiration from the fruit, herbs and natural treasures that surround the estate.
